What is Champagne?

The region's cool continental climate and unique chalk subsoils—deposited millions of years ago when the area was an ancient seabed—give the wines their hallmark minerality, razor-sharp acidity, and extraordinary aging potential. Non-vintage Champagne must age on lees for a minimum of 15 months, while vintage Champagne requires at least 36 months, and prestige cuvées often rest for seven years or more, developing the rich, toasty complexity that defines the finest examples.
