Understanding Oxidation
Oxidation occurs when wine is exposed to oxygen, triggering chemical changes that alter its color, aroma, and flavor. In controlled amounts, oxidation is a deliberate winemaking tool—sherry, Madeira, and vin jaune are intentionally oxidized to develop their characteristic nutty, caramelized profiles. Barrel aging introduces slow, beneficial micro-oxidation that softens tannins and integrates flavors over months or years. However, excessive or unintended oxidation is the most common wine fault, causing white wines to darken from pale gold to amber and red wines to shift from vibrant ruby to dull brown. Oxidized wine loses its fresh fruit character and develops flat, bruised-apple or stale-nut flavors that strip away the winemaker's intended expression.
Why It Matters
Understanding oxidation helps you recognize wine faults, store wine properly, and appreciate intentionally oxidative styles. A bottle left open overnight, a faulty cork, or improper cellar conditions can all cause unwanted oxidation—knowing the signs means you can catch a flawed bottle before it ruins a meal or identify when a wine's evolved character is intentional rather than a defect.
