What is Cava?
Cava is Spain's answer to Champagne, produced using the same traditional method in the Penedès region near Barcelona. Made primarily from Macabeu, Xarel-lo, and Parellada grapes, Cava produces wines of fine bubbles and elegant character at a fraction of Champagne's price. The majority of producers create dry styles with flavors of citrus, apple, and brioche. Cava's production in the warm Spanish climate differs from Champagne's cool climate approach, resulting in riper, fruitier expressions. Quality examples rival Champagne in finesse, making Cava one of wine's great values.
